  • Olive oil
  • BBQ rub (or any beef seasoning you’d like.. I like something heavy with black pepper and garlic powder)
  • BBQ sauce

  1. Prep and season beef back ribs with dry rub.
  2. Bake beef ribs for about 3 hours at 275 degrees F, until tender.
  3. Brush beef ribs with BBQ sauce and finish baking 15 minutes more.
  4. Rest and enjoy.

Detailed recipe steps

  1. Preheat oven to 275 degrees F.
  2. Season beef back ribs all over, first by massaging in olive oil. Then sprinkle with the BBQ rub seasonings and massage them in, too.
  3. Bake beef back ribs in the oven at a temperature of 275 degrees F uncovered, meat side down (bone side up) for 3 to 3.5 hours a thermometer measures an internal temperature of 202 – 210 degrees F.
  4. Remove beef back ribs from the oven, but leave the oven on so you can cook the ribs for the final step with BBQ sauce. (They’re probably falling off the bone tender at this point. You can probably eat them now if they’re done, but take the recipe a step further with more flavor by continuing.)
  5. Remove baked beef back ribs from the tray for a moment, and discard foil with beef juice on it. Put a new piece of foil in the rimmed baking sheet and transfer the beef ribs back on it, this time with meat side up.
  6. Brush meaty parts with bbq sauce and bake for 15 more minutes.
  7. Rest and enjoy.

Ways to make smoked beef back ribs on the Traeger

While you’re waiting on my smoker recipes for beef back ribs for my Traeger recipe catalog, here are ideas for enjoying this cut with the smoked foods method…

  1. Follow this my 321 method for beef back ribs smoked at 225 degrees F. It will combine wrapping the ribs with brushing them with BBQ sauce at different times.
  2. Smoke beef back ribs at 275 degrees for 3 hrs. When you increase the temperature to 275, they cook faster. Wrap them in foil until they reach an internal temp of 202 degrees F (~90 mins)
  3. Smoke at 225 degrees F, with no wrap until they’re done (about 3 hours until they reach a 205 – 210 internal temp). Then ​​wrap ‘em in butcher paper or foil during the resting period of about 15 minutes to 30 minutes..

Every home chef needs a reliable meat thermometer to cook food perfectly.

  2. ThermoPro digital thermometer – which has a wire that connects the thermometer to a display box outside the oven/grill.

It’s like being psychic! The great thing about either of the thermometers above is that I don’t have to take the food out of the oven to know the temperature.

How to use ‘em… What I do is stick the digital thermometer in steak, pork, chicken, whatever… Then put the food in the oven, on the smoker, or grill.

While the meat cooks, it reads the temperature so I know exactly what temp meat is as it’s cooking. Without having to take it out and check. It’s really difficult to overcook food when you know exactly what temp it is inside!
