Chicken Mami is perfect comfort food. It’s the Filipino version of the classic chicken noodle soup. In the Philippines, this Chicken Mami recipe is a favorite dish among local street vendors. Not only is it delicious, but it’s hearty and filling because it has a variety of toppings.

Other varieties of this soup, such as the Beef and Pork Mami, are also popular. However, this Chicken Mami recipe is easier to make compared to beef Mami.

The chicken Mami always starts with a hearty broth. To prepare this, start with boiling chicken bones in a stockpot filled with water.

Let the bones boil and simmer, skimming the sc*ms often to achieve a clearer broth. Alongside the bones, add some carrots, chopped onions, sliced celery, few bay leaves, and some whole peppercorns. But, I’ll get into the exact cooking method in a bit.

According to old folklore stories, this chicken Mami recipe was concocted by a Chinese trader in Manila named Ma Mon Luk.

He started selling bowls of chicken Mami at a popular eating hub in Manila -Binondo or Chinatown. It was so popular, it became a staple dish, and the rest is history, as they say!

In some restaurants in the Philippines, chicken mami is served alongside some Siopao with Asado filling.

If you plan to make this chicken noodle soup, and you’re out of chicken bones, you can always use chicken broth that is available in grocery stores.

Chicken broth cubes also do wonders. Just an FYI, chicken breasts also cook a lot faster than other chicken parts like the legs and thighs.

Shred the chicken breast, arrange it as toppings in the chicken mami recipe, and add some shredded cabbage, fried garlic, sliced scallions or chives, and some crushed chicharon salted pork crackling.

Don’t forget to add a few slices of hard-boiled egg. To savor the soup of this chicken mami recipe, add some ground black pepper and a dash of patis or fish sauce. Enjoy!

Ingredients

  • lb chicken breast or chicken thighs (bone-in thighs)
  • 7-10 cups water depending on pot size
  • egg noodles or Shanghai noodles rinsed and drained
  • 1 tbsp salt & pepper to taste

topping:

  • 2 eggs boiled & sliced in quarter slices
  • 1 onion quartered
  • 1 napa cabbage thinly sliced
  • 2 small carrots thinly sliced
  • 1 handful fried garlic chips
  • green onions chopped
  • 1 tbsp Patis fish sauce

Instructions

  • Fill your pot with 7-10 cups of water.

  • Add in your chicken bones or chicken breast, onion, and seasonings.

  • Bring to a boil on medium heat.

  • You can remove any soup scum at this point and let the soup simmer for approximately 30 minutes.

  • Remove the cooked meat and shred it into small pieces and place it on a plate for later use. You can put the bones back into the soup and let it simmer for another 30 minutes on low heat.

  • In a separate pot boil your noodles as directed on the packaging.

  • While the noodles cook, boil two eggs for about 3 or 4 minutes.

  • Slice the carrots and cabbage into thin strips and distribute them evenly in your serving bowls.

  • Once the soup is ready, place the cooked noodles, and shredded chicken into serving bowls, and pour hot soup over them.

  • Now slice the egg into quarters and add to each bowl.

  • Add garlic chips, the spring onion, and patis.

Chicken Mami Nutritional Information & Substitutes

The great thing about chicken Mami is that you can use whatever veggies you have on hand. If you don’t like spring onion and fried garlic chips, you can use kale, bok choy, and spinach as toppings.

If you’re short on time, you can use chicken bouillon cubes instead of chicken bones or breasts.

For a healthier noodle alternative, skip the Shanghai noodles and use udon noodles.
