Is getting veggies into your kids a struggle? Sometimes mine will gobble them up but others they won’t touch anything green with a 10 foot pole. It is frustrating at best. I know one thing my kids will always eat though… waffles. And if waffles are such a hit in our house why not just make veggies a little more fun by giving them a waffle-tastic makeover? These zucchini parmesan waffles are packed with 2 cups of zucchini, not that the kids noticed as they practically inhaled them in their delight that we were having waffles for DINNER!

I would love to take credit for this genius idea, but I actually found it on Yahoo Food. Have you been over there? Checking it out is a must! I was sucked in from the moment I entered the site. I knew I wanted a new recipe to try here and so I was immediately drawn to this article cleverly titled, “Get to Know the Buckle, Pie’s Rustic Cousin.” I am such a pie lover and especially a peach lover that I needed to know more. Not only does this article have text but even a quick video showing you exactly how to create this sweet little gem! I thought this might be THE one, but also knew that peaches are at the very end of their season so I kept scrolling.

Besides lots of delicious recipes tempting me at very pull of the mouse, I found some great tips in between. Do you know the trick to keeping an avocado from browning? Or have you ever seen this completely life changing invention that cuts butter so it softens almost instantly? Or maybe you have always wondered the secret to perfectly round cookies. Yahoo Food has you covered.

In the end, what I ended up finding though was great inspiration for a kid friendly dinner that made this sneaky mama very happy! A super easy recipe for Waffle Zucchini Parmesan Fritters. I was immediately drawn to the idea because I thought my kids would love the fun of having waffles for dinner and I could just keep it to myself that they are packed with nutrient filled veggies. Once I made them though, I really think they could also be part of a super elegant dinner for adults as well. They are 100% simple to make, but come out tender, flavorful, with a perfectly tender texture. I can imagine piling these on a plate topped with a piece of fried chicken (or rotisserie chicken for a healthier spin). Now that would be the ultimate chicken and waffles!

To make these really is super simple. First grate the zucchini. You will need 2 cups which is about 2 medium zucchinis. I used my shredder attachment for the Kitchenaid which made the whole process take about 2 minutes flat. Tossthe shredded zucchini with a small amount of salt and let it sit for about 30 minutes in a colander to draw out the moisture. Once it has sat, rinse it and then press it firmly to squeeze out as much water as possible and then pat dry with paper towels.

Now prep your batter by mixing the milk, egg, and half the parmesan in a bowl. Combine the flour salt and pepper in another bowl. Gently combine the dry ingredients into the wet ingredients and stir until just moistened.

Add the zucchini and toss everything together until combined.

Now just drop about 2 tablespoons into your waffle maker and let it cook 3-5 minutes until it is cooked through.

Repeat until you have made all of your waffles (mine made 4) and then sprinkle with the remaining parmesan and enjoy hot!

Now if that isn’t an easy and smart way to get veggies in the kids and dress up the dinner table all at the same time I don’t know what is!

Zucchini Parmesan Waffle Fritters Recipe

Ingredients

  • 2 cups shredded zucchini roughly 2 medium zucchini
  • 1 large egg
  • 1/4 cup milk
  • 1/2 cup grated Parmesan
  • 1/2 cup all-purpose flour
  • Neutral oil or nonstick cooking spray
  • Salt
  • Black pepper

Instructions

  • Place the shredded zucchini in a colander and sprinkle with about 1/4 teaspoon salt.

  • Let the salted zucchini sit for about 30 minutes. Then rinse well with cold water and press out as much of the water as possible. Blot dry with a lint-free towel or paper towels.

  • Preheat the waffle iron to medium and the oven to its lowest setting.

  • In a large bowl, whisk together the egg, milk, and 1/4 cup of the grated Parmesan.

  • In a small bowl, combine the flour with about 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper.

  • Mix the contents of the small bowl into the large bowl and then add the zucchini and toss until everything is well-combined.

  • Coat the waffle iron with nonstick spray or brush it with a neutral oil.

  • Place rounded tablespoons of the batter on the waffle iron, leaving room for the fritters to spread slightly. Close the lid and cook until lightly browned, about 3-5 minutes. (You may need to turn your waffle iron up or down slightly, depending on how powerful it is.)

  • Transfer finished fritters to the oven to keep warm while you cook the remaining fritters.

  • Serve topped with the remaining 1/4 cup Parmesan.

      Hi Maud- It has been awhile since I have made this recipe but I think it makes about 4-6 small waffles.
